Need help with creating a new google sheet

I attempted to create a new google sheet for 2026 by copying my 2025 and moving it to the 2026 folder. Then I deleted all of 2025 data. However, when I went back to my 2025 folder, the 2025 google sheet was gone. I have done this in previous years with no problem, however, this time, moving the copy erased 2025 from the 2025 folder. I tried doing this a couple more times with the same result.

I had to download a CSV from my bank to repopulate my 2025. Fortunately all the auto cat still worked.

I checked instructions on creating a new google sheet and it told me to do what I tried but failed to accomplish. Next I decided to just create a new sheet from the Foundation Template but got stuck because the instructions do not match what I see on my screen. When I click the Use button I get a dropdown box that has none of the choices listed in the instructions.
